Just wanted to let you know that if you can’t reach your regular blender because it’s on the high shelf of the pantry and your tall son has abandoned you to go to college, you can JUST fit all the ingredients into a smoothie blender, and it works. Put the eggs in first.

(I added vanilla and some nutmeg and a little baking powder, but left out the salt. They were lovely normal-ish pancakes. I can’t figure out why they work, but they do.)

I bet it would be delicious with chives in the batter or maybe some scallions. Top with a little sour cream and hot sauce. I may have to try that!

I make the same thing but add oats usually equal parts to cottage cheese or a little less than equal. I also add raspberries or blueberries to the batter.

Oooh! These look good! I think I could sneak them past my husband if I just don't mention the cottage cheese aspect of things, since the blender will probably obliterate any curds that might otherwise give things away. We are, in theory, supposed to be watching our carb intake, although we honestly very much aren't actually doing that.
